Ingredients

  • 1 lb ground turkey (look for low-fat, low-sodium options)

  • 1 medium onion, diced

  • 1 shallot, minced

  • 3 garlic cloves, minced

  • ¼ cup tomato paste

  • 1 medium sweet potato, diced

  • 1 cup low-sodium chicken broth

  • 2 tsp smoked paprika

  • 3 cups fresh kale, chopped

  • 1 medium avocado, sliced (for topping)

  • Fresh parsley, chopped (for garnish)

  • Crushed red pepper flakes (optional, for heat)

  • Salt & pepper to taste


Instructions

1. Heat a large skillet over medium heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned.

2. Stir in the diced onion, shallot and garlic, cooking until fragrant and translucent.

3. Add the tomato paste, diced sweet potatoes and smoked paprika. Stir to coat everything evenly.

4. Pour in the chicken broth and bring the mixture to a simmer. Cover and let cook for about 10-12 minutes or until the sweet potatoes are tender.

5. Add the chopped kale, stirring until wilted. Season with salt, pepper and crushed red pepper flakes as desired.

6. Serve hot, topping with sliced avocado and fresh parsley just before serving.
